As the city softens into spring, our pastry team turns to the season's first expressions - the gentlest produce, the brightest notes, the lightest hand.

Spring Gardens is an Afternoon Tea built around freshness rather than excess. Soft florals and early citrus. The natural sweetness of the season's first fruits, lifted by subtle herbal accents. Each element has been considered to mirror the shift in the air outside: longer days, lighter food, a quiet sense of renewal.

Traditional Afternoon Tea

Served alongside a selection of delicate finger sandwiches, our Spring Gardens Traditional Afternoon Tea moves with the season - lighter sandwiches, brighter pastries, and the gentle florals of early summer woven throughout. 

A Citrus Poached Salmon with herb crème fraîche on spinach bread opens with clean, herbal freshness, while a Blueberry, Lemon and Violet Cake brings the soft floral notes the season is built on. To close, an Earl Grey soaked Apricot Scone, served with jam and clotted cream, offers a quiet nod to tradition, gently reimagined.

Make it extra special with a sharing cocktail, a glass of Laurent-Perrier Brut Champagne, or our Laurent-Perrier Champagne Tasting Board for the table.

Savoury High Tea

The Spring Gardens Savoury High Tea reflects the lighter, brighter palate of the season. A Goats Cheese, Honey and Beetroot Macaron brings floral sweetness and earth in a single bite, while a Tuna Tartare in a tomato cone is finished with avocado and caviar - gentle, considered, anew.

Make it extra special with a sharing cocktail or glass of Laurent-Perrier Brut Champagne.

Afternoon Tea Drinks

Our Spring Gardens Drinks Menu is built to mirror the season - bright, floral, and lifted. 

A glass of Laurent-Perrier Brut Champagne sets the tone, with a Champagne Tasting Board for those inclined to linger longer. Sharing cocktail teapots - Violet & Vine, Bluebell & Apricot bring theatre to the table, while Peach & Petal and a Rhubarb Paloma offer something quieter for two. 

For the alcohol-free, Raspberry & Peach Spritz and Tropical Fizz carry the same spring brightness without compromise.

The tea leaves used are among the finest available. Only first and second flush leaves, those picked in prime season from March to July go into Newby products. Dark Woods Coffee

Dark Woods Coffee is an adventurous coffee roaster, Barista school, and pop-up café nestled on the edge of Marsden village in the West Yorkshire Pennines.

Though Dark Woods was born in 2013, the history of its founding partners takes in many years’ experience in roasting, sourcing, consultancy, training and machine development within the UK coffee industry. It is this collective knowledge and expertise which allowed them to rapidly grow a customer base which includes some of the country’s top cafés and restaurants.
